There are those times when you’re in a rush and everything seems so desperate and urgent, and some part of you demands to be filled, right now. Your need grows more insistent, more impatient and condenses your desire into a single, focused pinpoint of fundamental human existence that commands that you must, you must.

You must.

Kids, this pasta is the quickie of all pastas, and who doesn’t love a quickie to satisfy a primary human requirement?

Plus it’s healthy.

Pasta with Peas and Herbs

½ cup finely chopped fresh parsley, basil, tarragon, and our old friend mint

Zest of 1 lemon, finely chopped

1 small clove garlic, finely minced

2 TBSP fresh lemon juice

3 TBSP extra virgin olive oil

1 cup frozen peas, thawed

¼ cup freshly grated Parmesan cheese

1 package penne, rigatoni or rotini or any twisty pasta you like

Salt for the pot and salt and freshly ground pepper to taste.

Bring a large pot of water to a boil.

Combine, herbs, lemon zest, garlic, lemon juice and olive oil.

Once the water comes to a boil, add pasta and a little salt to pot. Follow the instructions on the package and cook pasta al dente (so it’s still slightly firm as you bite into it).

Drain the pasta over the peas (this will heat them), reserving a about a ½ cup water. Add to herb mixture, then pour over pasta, add cheese, toss and serve.
